Roasted Cauliflower - 2 Ways + Easy Salad with Homemade dressing!
Cauliflower is a real chameleon in the kitchen. You can cook it a ton of different ways or use it for a pile of different food substitutes. Cauliflower wings, cauliflower pizza crust, cauliflower rice, etc! But one of my favorite and easy ways to enjoy cauliflower is roasted in the oven. I don't know how cauliflower changes when it's roasted but it is probably my favorite roasted veggies.. I love it!
So I'm going to share with you 2 slightly different cauliflower recipes but both still very easy. Roasted cauliflower is a great side dish for any meal or even a main feature. How I enjoyed mine was I tossed it in a big salad with some homemade dressing and it was just perfect. (I'll share the salad and dressing with you as well).
So first things first you have to preheat the oven like with any recipe. So set your oven to 400 degrees Fahrenheit and then start prepping your cauliflower.
So of course you want to give your cauliflower a little wash, then we are going to chop up the cauliflower in pieces of your desired size. I like to vary my sizes so i had a few small pieces and big and I even had one big slice the was kind of like a "cauliflower steak". Now when ever i cut up cauliflower I make a HUGE mess! little bits all over the counter and floor so if you're a little anal about keeping it clean you may want a broom handy.
So after you're done chopping, line a baking sheet with parchment paper (Or I use a reusable silicone baking sheet, it's Betty Crooker brand literally 3 bucks from the dollar store and I love it, yay for less waste!). Spread out your cauliflower and drizzle some olive over over the florets and toss to coat. You could do this in a big bowl if you prefer but I just like to have less dishes and I find it just as easy, and be sparing with that olive oil, I feel like oil has this false rep as being healthy when It definitely is not so go easy with those liquid calories. After the oil sprinkle your spices on the cauliflower and toss to coat again. I'm quite lazy, this might be pretty obvious, maybe I should of name my paged cheap lazy vegan but one of my favorite vegan YouTubers already has her claim on that name so that's that. OK so like I was saying I'm lazy so my favourtie spice to use is just steak spice. My favorite brand being "The Keg", This is quite a specific ingredient so if you don't have this feel free to use whatever steak spice you have, or just any spices you enjoy, just don't go too crazy with that steak spice because it is a little salty. Also if you just don't have any steak spice at all you you can just use spices you already have that will easily mimic it, just use some salt, dehydrated onion & garlic (or garlic & onion powder), black pepper and paprika.
So after the cauliflower is all tossed and seasoned pop it in the preheated oven for 20 mins. While that's cooking start your quick and easy Spicy Maple BBQ sauce.
So in a bowl add 1 tsp of vegan butter, 2 tbsp of BBQ sauce, 1 Tbsp on maple syrup (not pancake syrup people, invest in the real stuff), and a squirt of sriracha. I'm not telling you have much sriracha you need because it really depends on how much you like spice.. i probably only did like 1/4-1/3 of a teaspoon. Heat this up in the microwave for about 30 seconds just to melt the butter and mix to combine. Now this sauce doesn't make a ton, just enough for a little coat on the cauliflower, and I'm only putting this on half my cauliflower so if you want to do all of your cauliflower this way feel free to double the recipe.
So after your cauliflower has been roasting for 20 mins remove from the oven and with a fork or thongs take the florets and add to your bowl with the sauce and lightly coat (better to do this one or two florets at a time) until the sauce is all gone. Again I only did a very light coat on about half of my cauliflower, just for a little extra flavour, if you want them all sauced or extra saucey make more sauce. After you're done coating flip over the florets that weren't sauced just to roast those a little on the other side and return to the oven for 5 mins (may need to be 5-10 depending on your oven)
After 5-10 minutes remove from oven and bam! easy roasted cauliflower. One just spiced and the other with some yummy maple BBQ sauce. Now you can enjoy these just as they are as a side dish but I put mine in a big salad and it was just soo yummy. I don't really have the exact portions for everything I put in my salad I just kind of used whatever I had on hand but here's roughly what I put in my salad:
Roasted Cauliflower Salad Ingredients:
- 1-2 handfuls of your favorite salad greens
- Roasted Cauliflower
- Chopped tomato
- Diced Red onion
- Diced peppers
- Hemp seeds and chia seeds
- Topped with homemade Lemon tahini dressing.
For the lemon tahini dressing I just use 3 Tbsp tahini, 1-2 tbsp of lemon juice, 2 tbsp nutritional yeast, 1/2 tsp miso paste, and a little bit of water to thin it all out and mix it well.
The finished product! It was so yummy! The sweetness from the raisins with the sweet roasted cauliflower was just so yummy. I was hoping to have some left over cauliflower for a salad for work but it did not last!
